  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1/2 cup canned corn (drained)
  • 1 can diced tomatoes with green chiles (optional)
  • 2 cups cooked pasta (like rotini or egg noodles)
  • 1/2 cup shredded cheddar cheese

For the fresh salsa:

  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup yellow bell pepper or corn
  • Fresh cilantro, chopped
  • Lime juice to taste
  • Salt and pepper to taste

Directions:

  1. In a skillet, heat olive oil over medium heat. Add ground beef and chopped onion. Cook until browned and fully cooked.
