🧂 Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil

  1. Preheat: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix coating: In a shallow dish, combine Parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.
  3. Whisk eggs: In another bowl, whisk eggs with Dijon until smooth.
  4. Coat chicken: Dip each breast in the egg mixture, let excess drip, then press into the Parmesan breadcrumb mix to adhere.
  5. Arrange: Place coated chicken on the prepared sheet and drizzle with olive oil.
  6. Bake: Cook 25–30 minutes until golden and chicken reaches 165°F (75°C) internally.
