For the Crepes

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/4 cups milk

  • 1/4 tsp salt

For the Filling

  • 1 tbsp olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup diced cooked ham
  • Salt and pepper to taste

For the Cream Sauce

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

👩‍🍳 Instructions

  1. Make crepe batter: Whisk flour, eggs, milk, melted butter, and salt until smooth. Let rest 15 minutes.
  2. Cook crepes: Heat a nonstick pan over medium heat. Pour batter, swirl to coat, and cook 1–2 minutes per side. Set aside.
  3. Prepare filling: Sauté mushrooms in olive oil until golden. Add ham, season, and cook 2 more minutes.
  4. Make sauce: Melt butter in a saucepan. Stir in flour, then slowly add milk. Cook until thickened. Add Parmesan, salt, and pepper.
