Ingredients
- 6 slices bacon, chopped
- 1 onion, diced
- 1 lb baby potatoes, halved
- 1 lb fresh green beans, trimmed
- 1 packet ranch seasoning mix
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook bacon: In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving some drippings in the pan.
- Sauté onion: Add diced onion to the skillet and cook until translucent, about 3–4 minutes.
- Add potatoes: Stir in halved baby potatoes and cook for 10–12 minutes until golden and tender, stirring occasionally.
- Add green beans: Add trimmed green beans to the skillet. Drizzle with olive oil and sprinkle ranch seasoning over everything. Stir to coat.
- Simmer: Cover and cook for 8–10 minutes until beans are tender but still vibrant.
- Finish: Return cooked bacon to the skillet. Toss everything together and season with salt and pepper to taste.
- Serve: Garnish with fresh parsley and serve warm as a side or light main dish.
