Mini Cheddar-Topped Meatloaf over Mash 🧀🥔

Individual meatloaf portions baked to perfection, topped with melted cheddar and served on creamy mashed potatoes.

Ingredients

  • 500 g ground beef
  • 1 small onion, finely chopped
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 tbsp ketchup
  • 1 tsp mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup grated cheddar cheese
  • Fresh parsley for garnish

For the mashed potatoes

  • 800 g potatoes, peeled and chopped
  • 2 tbsp butter
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Prepare meatloaf mixture: In a bowl, mix ground beef, onion, egg, breadcrumbs, ketchup, mustard, garlic powder, salt, and pepper.
  2. Shape & bake: Form into small oval portions and place in a greased baking tray. Bake at 375°F (190°C) for 20 minutes.
  3. Add cheese: Top each meatloaf with grated cheddar and bake for another 5–10 minutes until melted and golden.
  4. Make mashed potatoes: Boil potatoes until tender. Mash with butter, milk, salt, and pepper until smooth.
  5. Assemble: Spoon mashed potatoes into serving tray or plates. Place meatloaf portions on top and garnish with parsley.
