Ingredients

  • 3 cups chilled mashed potatoes
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • ÂĽ cup chopped chives
  • ÂĽ cup all-purpose flour
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • Cooking spray or butter (for greasing)

Directions

  1. Preheat oven to 400°F (200°C) and grease a mini muffin pan.
  2. In a large bowl, mix mashed potatoes, egg, cheddar cheese, chives, flour, garlic powder, salt, and pepper until well combined.
  3. Roll mixture into 1-inch balls and coat each with grated Parmesan cheese.
  4. Place coated balls into muffin pan and gently press down to form puffs.
