Ingredients
- 4 boneless, skinless chicken breasts
- 1 can (14 oz) diced tomatoes
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley for garnish (optional)
Directions
- Place chicken breasts in the bottom of the slow cooker.
- In a bowl, mix tomatoes, olives, feta, olive oil, lemon juice, oregano, garlic powder, salt, pepper, and red pepper flakes.
- Pour mixture over chicken, covering evenly.
- Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
- Remove chicken, shred or slice, and return to sauce if desired.
- Garnish with parsley and serve with rice, couscous, or pita.
