This quick and delicious weeknight dinner combines taco seasoning with pasta for the perfect flavor combo. A hearty dish thatโ€™s sure to be a hit!

Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies (optional)
  • 2 cups uncooked pasta (rotini, penne, or elbow)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Directions

  1. Cook pasta according to package instructions, drain, and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onion softened (6โ€“8 minutes).
  3. Stir in taco seasoning, diced tomatoes, and green chilies. Simmer for 5โ€“7 minutes.
  4. Add cooked pasta to skillet and toss until well mixed.
  5. Stir in cheddar cheese and sour cream. Season with salt and pepper. Cook 2โ€“3 minutes until cheese melts and everything is coated.
  6. Serve hot, garnished with fresh cilantro if desired.
