Crunchy on the outside, cheesy on the inside—these fritters are the ultimate snack!

Ingredients

  • 2 cups corn kernels (fresh, frozen, or canned, drained)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 tsp baking powder
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated Cotija cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 large egg
  • 1/4 cup milk
  • Vegetable oil, for frying
  • Lime wedges, for serving
  • Extra Cotija cheese, for garnish

Directions

  1. In a large bowl, mix corn, flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and pepper.
  2. Stir in Cotija cheese, cilantro, egg, and milk until a thick batter forms.
  3. Heat 1 inch of vegetable oil in a skillet over medium heat.
  4. Drop spoonfuls of batter into hot oil, flatten slightly, and fry 2–3 minutes per side until golden and crispy.
  5. Remove fritters and drain on paper towels.
  6. Serve warm with lime wedges and sprinkle with extra Cotija cheese.
