Ingredients

  • 1 cup wild rice, rinsed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 cup mushrooms, sliced
  • 1 cup kale, chopped
  • Salt and pepper, to taste
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • Fresh parsley, for garnish

Directions

  1. Sauté Veggies: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–7 minutes until softened. Stir in garlic and cook 1 minute.
  2. Cook Rice: Add wild rice, broth, thyme, rosemary, and bay leaf. Bring to boil, then reduce heat, cover, and simmer ~45 minutes until rice is tender.
  3. Add Mushrooms & Kale: Stir in mushrooms and kale. Cook 10 minutes until mushrooms are tender and kale is wilted.
  4. Finish: Remove bay leaf. Season with salt and pepper. Stir in cream or coconut milk for creaminess.
  5. Serve: Ladle hot soup into bowls. Garnish with fresh parsley.
