🍂 Cozy Autumn Wild Rice Soup 🥣

Ingredients
- 1 cup wild rice, rinsed
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 cup mushrooms, sliced
- 1 cup kale, chopped
- Salt and pepper, to taste
- 1 cup heavy cream (or coconut milk for dairy-free)
- Fresh parsley, for garnish
Directions
- Sauté Veggies: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook 5–7 minutes until softened. Stir in garlic and cook 1 minute.
- Cook Rice: Add wild rice, broth, thyme, rosemary, and bay leaf. Bring to boil, then reduce heat, cover, and simmer ~45 minutes until rice is tender.
- Add Mushrooms & Kale: Stir in mushrooms and kale. Cook 10 minutes until mushrooms are tender and kale is wilted.
- Finish: Remove bay leaf. Season with salt and pepper. Stir in cream or coconut milk for creaminess.
- Serve: Ladle hot soup into bowls. Garnish with fresh parsley.
