Ingredients
For the Fritters
- 2 cups cooked corned beef, finely chopped
- 1 cup sauerkraut, drained and patted dry
- 1 1/2 cups shredded Swiss cheese
- 4 oz cream cheese, softened
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups seasoned breadcrumbs
- Vegetable oil, for frying
For the Thousand Island Dipping Sauce
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp sweet pickle relish
- 1 tsp white vinegar
- Salt and pepper, to taste
Instructions
- Prepare Mixture: Combine corned beef, sauerkraut, Swiss cheese, cream cheese, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix well. Scoop tablespoon portions, roll into balls, and refrigerate 30 minutes.
- Bread Fritters: Set up flour, beaten eggs, and breadcrumbs. Roll each ball in flour, dip in egg, then coat in breadcrumbs.
- Fry: Heat oil to 350°F (175°C). Fry fritters in batches 2–3 minutes until golden. Drain on paper towels.
- Make Sauce: Mix mayonnaise, ketchup, relish, and vinegar. Season with salt and pepper.
- Serve: Arrange fritters on platter with dipping sauce. Garnish and enjoy warm.
