Chicken with Creamy Garlic Parmesan Rice

Ingredients

For the Chicken

  • 1 lb boneless skinless chicken breast, sliced into strips
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 3/4 cup chicken broth
  • 1 tbsp lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp chopped fresh parsley (for garnish)

For the Garlic Parmesan Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions

  1. Coat Chicken: Mix flour, garlic powder, Italian seasoning, salt, and pepper. Dredge chicken strips in mixture.
  2. Cook Chicken: Heat olive oil and 2 tbsp butter in skillet. Cook chicken 6–8 minutes per side until golden. Set aside.
  3. Make Sauce: Melt remaining butter in skillet. Sauté garlic 30 seconds. Add broth and lemon juice. Simmer 2–3 minutes.
  4. Finish Chicken: Stir in Parmesan and red pepper flakes. Return chicken to skillet and coat in sauce. Simmer 2–3 minutes.
  5. Cook Rice: In saucepan, melt butter and sauté garlic. Add rice and stir 1 minute. Add broth, salt, and pepper. Simmer covered 15–18 minutes until tender.
  6. Finish Rice: Stir in Parmesan until creamy.
  7. Serve: Plate rice, top with chicken, drizzle sauce, and garnish with parsley.
