Ingredients

  • 2 cups leftover or rotisserie chicken, shredded
  • 1 lb wide egg noodles
  • 3 tbsp butter
  • 1 can cream of chicken soup
  • 1/2 cup cream cheese
  • 3/4 cup chicken stock
  • 1 cup milk or heavy cream
  • 1 can peas and carrots, drained
  • Salt and pepper, to taste

Optional for More Flavor

  • 1 medium onion, diced (or onion powder)
  • 1 stalk celery, chopped
  • 2 cloves garlic, minced (or garlic powder)
  • Parmesan cheese, for garnish

Directions

  1. Cook Pasta: Boil noodles 8–9 minutes according to package. Drain and set aside.
  2. Sauté: In same skillet, melt butter over medium heat. Add onion and garlic if using, cook until fragrant.
  3. Make Sauce: Stir in chicken, cream of chicken soup, cream cheese, chicken stock, milk/cream, peas, and carrots. Cook 5 minutes, stirring regularly.
  4. Combine: Add pasta back to skillet. Stir until fully coated in sauce.
  5. Simmer: Cook another 3–5 minutes until creamy and heated through.
  6. Serve: Garnish with Parmesan and enjoy warm.
