Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 4 large carrots, sliced
  • 3 medium potatoes, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Coat Beef: Toss beef cubes with flour until evenly coated.
  2. Sear: Heat olive oil in skillet over medium-high. Brown beef on all sides, then transfer to crockpot.
  3. Add Veggies: Place carrots, potatoes, onion, and garlic into crockpot.
  4. Mix Broth: In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour over crockpot ingredients.
  5. Cook: Cover and cook on low 8 hours or high 4–5 hours until beef is tender and vegetables are cooked.
  6. Finish: Remove bay leaves. Taste and adjust seasoning with salt and pepper.
  7. Serve: Garnish with fresh parsley if desired. Enjoy warm!
