Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tbsp all-purpose flour
- 2 tbsp olive oil
- 4 large carrots, sliced
- 3 medium potatoes, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (optional)
Instructions
- Coat Beef: Toss beef cubes with flour until evenly coated.
- Sear: Heat olive oil in skillet over medium-high. Brown beef on all sides, then transfer to crockpot.
- Add Veggies: Place carrots, potatoes, onion, and garlic into crockpot.
- Mix Broth: In a bowl, whisk beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour over crockpot ingredients.
- Cook: Cover and cook on low 8 hours or high 4–5 hours until beef is tender and vegetables are cooked.
- Finish: Remove bay leaves. Taste and adjust seasoning with salt and pepper.
