Ingredients (Yields ~24 squares)
- 1⅔ cups (335 g) granulated sugar
- ⅔ cup (160 mL) evaporated milk
- 1 tbsp (14 g) unsalted butter
- ½ tsp fine sea salt
- 6 oz milk chocolate chips
- 16 large marshmallows
- 1 tsp pure vanilla extract
- 1 cup (115 g) toasted pecans or walnuts, coarsely chopped
Instructions
- Build Base: In saucepan, combine sugar, evaporated milk, butter, and salt. Stir over medium heat until butter melts and sugar dissolves (~2–3 min).
- Boil: Once bubbling, boil gently for exactly 5 minutes, stirring constantly. Mixture will thicken and look glossy.
- Melt Chocolate: Remove from heat. Add chocolate chips and stir until smooth (30–45 sec).
- Finish Blend: Add marshmallows, vanilla, and optional peanut butter. Stir 45–60 sec until marshmallows mostly melt and mixture thickens.
- Fold Nuts: Stir in pecans or walnuts until just distributed.
- Set & Slice: Pour into parchment-lined 8×8-inch pan. Smooth top. Cool 30 min at room temp, then refrigerate 15–20 min until firm. Lift out and cut into 1-inch squares.
