Ingredients
- 1½ cups rolled oats
- 1 cup milk
- 1 tbsp honey
- 2¼ tsp active dry yeast
- 2¼ cups all-purpose flour
- 1 tsp salt
- ¼ cup warm water
- 2 tbsp olive oil (or melted butter)
- ½ cup chopped walnuts (optional)
- Extra oats for topping
Instructions
- Prep Oven: Preheat to 375°F (190°C). Grease a loaf pan.
- Soften Oats: Combine oats and milk in a bowl. Let sit 10 minutes.
- Activate Yeast: Dissolve yeast and honey in warm water. Let sit 5 minutes until frothy.
- Mix Dough: Add yeast mixture to oats with olive oil, salt, and flour. Mix until dough forms.
- Knead: Knead on floured surface 5–7 minutes until smooth and elastic.
- First Rise: Place dough in greased bowl. Cover and let rise 1 hour until doubled.
- Shape: Punch down dough. Transfer to loaf pan. Sprinkle with oats and walnuts.
- Bake: Bake 30–35 minutes until golden and hollow-sounding when tapped.
- Cool: Let cool on wire rack before slicing.
