Ingredients

Chocolate Dough

  • 2 cups (250 g) all-purpose flour
  • ¾ cup (75 g) unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp fine sea salt
  • 1 cup (226 g) unsalted butter, softened
  • 1½ cups (300 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract

Swirl & Finish

  • 1 cup marshmallow fluff or 12 large marshmallows, halved
  • Optional: ½ cup mini chocolate chips
  • Flaky sea salt (optional, for finishing)

Instructions

  1. Mix Dry Ingredients: Whisk flour, cocoa, baking soda, and salt until smooth. Set aside.
  2. Cream Butter & Sugar: Beat butter and sugar 3–4 minutes until light and fluffy.
  3. Add Wet Ingredients: Beat in eggs one at a time. Mix in vanilla until smooth.
  4. Combine Dough: Add dry mix gradually on low speed. Chill dough 1 hour.
  5. Prep & Scoop: Preheat oven to 325°F (163°C). Line baking sheets. Scoop 2-tbsp dough balls, 2 inches apart.
  6. Create Swirls: • Fluff method: Press a well, add 1 tsp fluff, swirl with toothpick. • Marshmallow method: Bake 5 min, press ½ marshmallow in center, return to oven.
  7. Bake: Continue baking 5–7 min (total 10–12). Edges set, centers soft. Marshmallows golden.
  8. Cool & Finish: Rest 5 min on sheet, then transfer to rack. Sprinkle lightly with flaky salt.
