Ingredients
Cheesecake Filling
- 227 g full-fat cream cheese, softened
- 30 g powdered sugar
- 5 ml pure vanilla extract
- 60 ml smooth strawberry purée
Crunch Coating
- 90 g (1 cup) graham cracker crumbs
- 50 g (ÂĽ cup) granulated sugar
- 57 g (ÂĽ cup) unsalted butter, melted
- 15 g (½ cup) freeze-dried strawberries, crushed (reserve 1 tbsp for garnish)
Glaze & Finish
- 240 ml (1 cup) strawberry glaze (store-bought or homemade)
Instructions
- Make Filling: Beat cream cheese, powdered sugar, vanilla, and strawberry purée until smooth and glossy (1–2 min). Chill 30 min.
- Prep Coating: Mix graham crumbs, sugar, butter, and most crushed strawberries until sandy. Reserve 1 tbsp for garnish.
- Shape Bites: Scoop ~15 g portions, roll into 1-inch balls. Place on parchment tray. Freeze 15 min.
- Glaze & Coat: Dip balls in strawberry glaze, let excess drip. Roll in graham-strawberry mix. Sprinkle reserved crushed strawberries.
- Set & Serve: Chill uncovered ≥1 hr to firm. Serve cold for best texture.
