Ingredients

  • 1½ cups unsweetened shredded coconut (plus ½ cup for rolling)
  • 1 cup dried pineapple chunks (soft, not candied)
  • ½ cup raw cashews or almonds
  • 2 tbsp coconut oil, softened
  • 1 tbsp honey or pure maple syrup
  • 1 tsp pure vanilla extract
  • Pinch of fine sea salt

Instructions

  1. Prep Ingredients: If pineapple is firm, soak in hot water 10 min, drain, and pat dry.
  2. Process Base: In food processor, pulse 1½ cups coconut, pineapple, and cashews until finely chopped and clumping.
  3. Bind Mixture: Add coconut oil, honey/maple syrup, vanilla, and salt. Process until sticky and moldable.
  4. Form Bites: Scoop ~1 tbsp portions. Roll into smooth balls. Place on tray.
  5. Coat & Set: Roll balls in reserved ½ cup coconut. Chill ≥30 min for best texture.
  6. Store: Keep in airtight container in fridge up to 1 week.
