Ingredients

For the Bread

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream or plain yogurt
  • 1 tbsp lemon zest (≈1 lemon)
  • ¼ cup fresh lemon juice (≈1 lemon)
  • 1 tsp vanilla extract
  • ½ cup shelled pistachios, chopped (plus extra for garnish)

For the Lemon Glaze

  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • ½ tsp lemon zest (optional)

Instructions

  1. Preheat Oven: Preheat to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment.
  2. Dry Mix: Whisk flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream Butter & Sugar: Beat butter and sugar until light and fluffy (3–4 min).
  4. Add Wet Ingredients: Beat in eggs one at a time. Stir in sour cream, lemon zest, lemon juice, and vanilla until smooth.
  5. Combine: Gradually add dry mix to wet mix, stirring gently. Fold in pistachios.
  6. Bake: Pour batter into loaf pan. Smooth top. Bake 55–60 min until toothpick comes out clean.
  7. Glaze: Whisk powdered sugar, lemon juice, and zest until smooth.
  8. Cool & Finish: Cool bread 10 min in pan, then transfer to rack. Drizzle glaze and sprinkle pistachios.
  9. Serve: Slice and enjoy as a breakfast treat or light dessert.
