Ingredients

  • 1¼ cups (250 g) granulated sugar
  • 1 large egg

  • 3 cups (375 g) all-purpose flour
  • ½ tsp baking powder
  • ½ tsp fine sea salt

For the Cheesecake Layer

  • 16 oz (452 g) full-fat cream cheese, softened
  • ½ cup (100 g) granulated sugar
  • 1 large egg
  • 1 tsp pure vanilla extract

For Topping

  • 2 tbsp coarse or sanding sugar

Instructions

  1. Prepare Oven & Pan: Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment and lightly grease.
  2. Make Cookie Dough: Cream butter and sugar until fluffy (3 min). Beat in egg and vanilla. Whisk flour, baking powder, and salt separately, then add gradually to butter mixture until dough forms.
  3. Form Crust: Press two-thirds of dough evenly into pan. Reserve remaining dough.
  4. Prepare Cheesecake Filling: Beat cream cheese and sugar until smooth (2 min). Add egg and vanilla; mix until combined.
  5. Assemble: Spread cheesecake filling over crust. Crumble reserved dough on top. Sprinkle coarse sugar.
  6. Bake: Bake 35–40 min until cheesecake is set (slight jiggle) and topping is golden.
  7. Cool & Chill: Cool completely, then refrigerate 4 hrs or overnight.
  8. Serve: Lift slab with parchment, slice into squares with clean knife for neat edges.
