Ingredients

  • 2 cups pecan halves (toasted preferred)
  • 1 cup soft caramels or homemade caramel
  • 2 tbsp heavy cream
  • 2 cups high-quality chocolate chips or melting chocolate
  • 1 tbsp coconut oil or butter (optional, for glossy chocolate)

Instructions

  1. Prepare the Pecan Base: Line a baking sheet with parchment or silicone mat. Arrange pecans in clusters of 3–4 pieces to form “turtle legs.”
  2. Melt the Caramel: In microwave-safe bowl, combine caramels and cream. Heat in 30-sec intervals, stirring until smooth.
  3. Top with Caramel: Spoon a small amount of melted caramel over each pecan cluster, letting it spread slightly. Cool 10–15 min until set.
  4. Melt Chocolate: Melt chocolate (with coconut oil or butter if using) until smooth and glossy.
  5. Finish Turtles: Spoon chocolate over caramel-covered pecans, ensuring they’re fully coated. Smooth tops with spoon or spatula.
  6. Set & Serve: Let candies cool at room temp or refrigerate until firm. Store in airtight container.
