Ingredients

For the Doughnuts

  • 2¼ tsp active dry yeast
  • ¾ cup warm milk
  • ¼ cup sugar
  • 2½ cups all-purpose flour
  • ¼ tsp salt
  • 2 tbsp butter, softened
  • 2 egg yolks
  • Oil for frying
  • Granulated sugar (for coating)

For the Vanilla Cream Filling

  • 1 cup heavy cream
  • ½ cup mascarpone or cream cheese
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Make the Dough: Mix warm milk and sugar, add yeast and let sit until foamy. Add flour, salt, butter, and egg yolks. Knead until smooth. Cover and let rise for 1 hour.
  2. Shape & Fry: Roll dough to ½-inch thick, cut into rounds, let rise 30 minutes. Fry until golden. Drain and roll in sugar.
  3. Make the Cream: Whip heavy cream to soft peaks. Add mascarpone, powdered sugar, and vanilla. Beat until thick and fluffy.
  4. Assemble: Slice doughnuts halfway and pipe in cream. Stack or serve individually.
