Soft, buttery cookies filled with creamy cheesecake, kissed with cinnamon sugar, and optionally drizzled with caramel. A unique twist on donuts and cookies combined!
Ingredients
For the Dough
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
For the Cheesecake Filling
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 tsp vanilla extract
For the Cinnamon Sugar Coating
- 1 cup granulated sugar
- 1 tbsp ground cinnamon
For the Caramel Sauce (Optional)
- 1 cup caramel sauce
Instructions
- Prepare the Dough: Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until just combined.
- Prepare Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Transfer to a piping bag.
- Shape Cookies: Preheat oven to 350°F (175°C). Line baking sheet with parchment. Roll dough into 1-inch balls, flatten, and cut into circles. Pipe cheesecake filling around edges, fold dough over to enclose, press to seal, and cut out centers to form donut shapes.
- Coat Cookies: Mix sugar and cinnamon in a shallow dish. Roll each cookie to coat.
- Bake: Arrange cookies 2 inches apart on sheet. Bake 12–15 minutes until lightly golden and set.
- Serve: Cool slightly, drizzle with caramel if desired, and enjoy!
