Ingredients

For the Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt

For the Cheesecake Filling

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract

For the Cinnamon Sugar Coating

  • 1 cup granulated sugar
  • 1 tbsp ground cinnamon

For the Caramel Sauce (Optional)

  • 1 cup caramel sauce

Instructions

  1. Prepare the Dough: Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add vanilla. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into wet ingredients until just combined.
  2. Prepare Cheesecake Filling: Beat cream cheese, sugar, and vanilla until smooth. Transfer to a piping bag.
  3. Shape Cookies: Preheat oven to 350°F (175°C). Line baking sheet with parchment. Roll dough into 1-inch balls, flatten, and cut into circles. Pipe cheesecake filling around edges, fold dough over to enclose, press to seal, and cut out centers to form donut shapes.
  4. Coat Cookies: Mix sugar and cinnamon in a shallow dish. Roll each cookie to coat.
  5. Bake: Arrange cookies 2 inches apart on sheet. Bake 12–15 minutes until lightly golden and set.
  6. Serve: Cool slightly, drizzle with caramel if desired, and enjoy!
