Rich brownies topped with fluffy marshmallow frosting and snowy coconutโ€”like a Hostess Sno Ball in brownie form.

Ingredients

Brownies

  • ยฝ cup unsalted butter
  • 2 oz unsweetened chocolate, chopped
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ยฝ cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ยผ teaspoon salt

Marshmallow frosting

  • 2 cups mini marshmallows (or 1 jar, 7 oz marshmallow crรจme)
  • 2 tablespoons milk or heavy cream
  • 2 tablespoons powdered sugar
  • ยฝ teaspoon vanilla extract

Topping

  • 1ยฝ cups sweetened shredded coconut
  • Pink food coloring (optional, for classic Sno Ball look)
  • Sprinkles (optional)

Instructions

  1. Prep: Preheat oven to 350ยฐF (175ยฐC). Line an 8ร—8-inch pan with parchment and lightly grease.
  2. Melt: In a saucepan over low heat, melt butter and chopped chocolate, stirring until smooth. Remove from heat.
  3. Mix batter: Whisk in sugar, then eggs and vanilla. Sift in flour, cocoa, and salt; fold until just combined.
  4. Bake: Spread batter in pan and bake 18โ€“22 minutes, until a toothpick comes out with moist crumbs. Cool completely.
  5. Make frosting: In a small pot, gently heat marshmallows with milk, stirring until smooth. Remove from heat; whisk in powdered sugar and vanilla. Let cool 5 minutes to thicken.
  6. Tint coconut: In a bowl, toss coconut with a drop or two of pink food coloring until evenly tinted (optional).
  7. Top brownies: Spread marshmallow frosting over cooled brownies. Immediately sprinkle/tamp pink coconut on top to cover.
  8. Set & slice: Chill 20โ€“30 minutes to set, then cut into squares. Add sprinkles if desired.
