Sno Ball Brownies ๐ง๐ซ
Rich brownies topped with fluffy marshmallow frosting and snowy coconutโlike a Hostess Sno Ball in brownie form.
Ingredients
Brownies
- ยฝ cup unsalted butter
- 2 oz unsweetened chocolate, chopped
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ยฝ cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- ยผ teaspoon salt
Marshmallow frosting
- 2 cups mini marshmallows (or 1 jar, 7 oz marshmallow crรจme)
- 2 tablespoons milk or heavy cream
- 2 tablespoons powdered sugar
- ยฝ teaspoon vanilla extract
Topping
- 1ยฝ cups sweetened shredded coconut
- Pink food coloring (optional, for classic Sno Ball look)
- Sprinkles (optional)
Instructions
- Prep: Preheat oven to 350ยฐF (175ยฐC). Line an 8ร8-inch pan with parchment and lightly grease.
- Melt: In a saucepan over low heat, melt butter and chopped chocolate, stirring until smooth. Remove from heat.
- Mix batter: Whisk in sugar, then eggs and vanilla. Sift in flour, cocoa, and salt; fold until just combined.
- Bake: Spread batter in pan and bake 18โ22 minutes, until a toothpick comes out with moist crumbs. Cool completely.
- Make frosting: In a small pot, gently heat marshmallows with milk, stirring until smooth. Remove from heat; whisk in powdered sugar and vanilla. Let cool 5 minutes to thicken.
- Tint coconut: In a bowl, toss coconut with a drop or two of pink food coloring until evenly tinted (optional).
- Top brownies: Spread marshmallow frosting over cooled brownies. Immediately sprinkle/tamp pink coconut on top to cover.
- Set & slice: Chill 20โ30 minutes to set, then cut into squares. Add sprinkles if desired.
