Homemade Keto Cauliflower Tater Tots 🥔✨

This keto-friendly idea is my new go-to for staying full and on track. It’s so simple, but it’s made a huge difference! 🥰

Ingredients

  • 2 cups cauliflower rice (fresh or frozen, cooked and drained)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons almond flour (for binding)
  • Cooking spray or olive oil

Instructions

  1. Prepare Cauliflower: Pulse fresh florets into rice or use frozen cauliflower rice. Steam/microwave 5–7 minutes. Drain thoroughly using a towel or cheesecloth.
  2. Mix Ingredients: In a bowl, combine cauliflower rice, mozzarella, Parmesan, almond flour, egg, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Shape Tots: Scoop 1 tablespoon of mixture, roll into tater tot shapes, and place on parchment-lined baking sheet.
  4. Bake: Preheat oven to 400°F (200°C). Spray or brush tots with oil. Bake 20–25 minutes, flipping halfway, until golden and crispy.
  5. Air Fry Option: Preheat air fryer to 375°F (190°C). Place tots in basket without touching. Air fry 10–12 minutes, shaking halfway, until golden brown
