Ingredients

For the Cake

  • 1½ cups all-purpose flour
  • ½ cup shredded coconut (plus extra for topping)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup honey
  • ½ cup fresh orange juice
  • Zest of 1 large orange
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ½ cup Greek yogurt (or plain yogurt)
  • 1 teaspoon vanilla extract

Optional Topping

  • Extra shredded coconut
  • Drizzle of honey
  • Orange zest curls

Instructions

  1. Preheat Oven: Set oven to 350°F (175°C). Grease and flour a loaf pan or round cake pan.
  2. Mix Dry Ingredients: In a bowl, whisk flour, coconut, baking powder, baking soda, and salt.
  3. Cream Butter & Honey: Beat softened butter with honey until light and fluffy. Add eggs one at a time, mixing well.
  4. Add Flavors: Stir in orange juice, zest, yogurt, and vanilla extract until smooth.
  5. Combine: Gradually fold dry ingredients into wet mixture until just combined.
  6. Bake: Pour batter into prepared pan. Bake 35–40 minutes, or until a toothpick comes out clean.
  7. Cool & Top: Let cake cool. Sprinkle with coconut, drizzle honey, and garnish with orange zest curls.
