A classic Russian cottage cheese casserole—light, slightly sweet, and perfect for breakfast or dessert.
Ingredients
- 2 cups (500g) cottage cheese or farmer’s cheese (drained if wet)
- 2 large eggs
- ½ cup (100g) granulated sugar
- ¼ cup (60ml) sour cream or plain yogurt
- ½ teaspoon vanilla extract
- 2 tablespoons semolina or all-purpose flour (optional, for texture)
- Pinch of salt
- Butter for greasing the baking dish
Instructions
- Preheat Oven: Set oven to 350°F (175°C). Grease a medium baking dish with butter.
- Mix Base: In a large bowl, combine cottage cheese, eggs, sugar, sour cream, vanilla, and salt. Blend until smooth.
- Add Texture: Stir in semolina or flour if using. Let rest for 10 minutes to thicken.
- Bake: Pour mixture into prepared dish. Smooth the top. Bake for 40–45 minutes until golden and set.
- Cool & Serve: Allow to cool slightly before slicing. Serve warm or chilled.
