Ingredients

  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

For the Roasted Potatoes

  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Cajun seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Preheat oven: Set oven to 425°F (220°C).
  2. Season pork: Rub tenderloin with olive oil and all seasonings. Let rest while prepping potatoes.
  3. Prep potatoes: Toss halved potatoes with olive oil, garlic powder, Cajun seasoning, salt, and pepper. Spread on baking sheet.
  4. Sear pork: In a hot skillet, sear pork 2–3 minutes per side until browned. Place on baking sheet with potatoes.
  5. Roast: Roast 20–25 minutes until pork reaches 145°F (63°C) and potatoes are tender and golden.
  6. Rest: Let pork rest 5 minutes before slicing. Sprinkle parsley over potatoes.
  7. Serve: Plate pork slices with roasted potatoes for a bold, hearty meal.
