Ingredients

  • 12 oz pasta (penne, rotini, or your favorite)
  • 1 lb ground beef (or sausage)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (15 oz) tomato sauce
  • 1 cup heavy cream (or half & half)
  • 2 cups shredded cheddar cheese (or Velveeta for extra creamy)
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley or green onions, for garnish

Directions

  1. Cook pasta: Boil pasta according to package directions until al dente. Drain and set aside.
  2. Brown beef: In a large skillet, cook ground beef with onion until browned. Drain excess fat. Add garlic and cook 1 more minute.
  3. Make sauce: Stir in Rotel, tomato sauce, chili powder, paprika, salt, and pepper. Simmer 5 minutes.
  4. Add cream: Pour in heavy cream and stir until sauce is smooth.
  5. Melt cheese: Add shredded cheddar (or Velveeta) and mix until melted and creamy.
  6. Combine: Toss pasta into the sauce until fully coated.
  7. Serve: Garnish with parsley or green onions. Enjoy hot.
