Golden, cheesy quesadillas stuffed with juicy steak, sautéed peppers, and onions—perfect for a quick, hearty meal.

Ingredients

  • 1 lb steak (sirloin, flank, or ribeye), thinly sliced
  • 1 tbsp olive oil
  • 1 small onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt & black pepper, to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
  • 2 tbsp butter (for cooking)
  • Salsa, sour cream, or guacamole (for dipping)

Directions

  1. Cook steak: Heat olive oil in skillet over medium-high. Cook steak slices 3–4 minutes until browned. Remove and set aside.
  2. Sauté veggies: In same skillet, cook onions, peppers, and garlic until softened. Return steak, season with chili powder, cumin, salt, and pepper. Mix well.
  3. Assemble quesadillas: Sprinkle cheese on half of each tortilla. Add steak & veggie mix, then top with more cheese. Fold tortillas in half.
  4. Cook: Heat butter in skillet. Cook quesadillas 2–3 minutes per side until golden and cheese melts.
  5. Serve: Slice into wedges. Enjoy hot with salsa, sour cream, or guacamole.
