Ingredients

  • 8 lamb chops

  1. Make marinade: In a bowl, whisk olive oil, garlic, lemon juice, red wine vinegar, oregano, rosemary, paprika, salt, and pepper.
  2. Marinate: Pat lamb chops dry. Coat with marinade in a dish or bag and refrigerate 30–60 minutes.
  3. Prep veg: Toss mushrooms and tomatoes with 1 tbsp olive oil, a pinch of salt, and oregano.
  4. Sear: Heat a large oven-safe skillet over medium-high. Sear lamb chops 2–3 minutes per side until browned.
  5. Roast: Add mushrooms and tomatoes to the skillet around the chops. Transfer to a 200°C (400°F) oven and roast 6–10 minutes, until lamb reaches desired doneness (about 57–60°C/135–140°F for medium).
  6. Rest & serve: Let lamb rest 5 minutes. Top with feta and parsley, and spoon pan juices over.
