Ingredients
- 8 lamb chops
- ¼ cup olive oil
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp dried rosemary (or thyme)
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 200 g mushrooms, sliced
- 1½ cups cherry tomatoes (or diced tomatoes)
- Optional: ¼ cup crumbled feta, fresh parsley for garnish

- Make marinade: In a bowl, whisk olive oil, garlic, lemon juice, red wine vinegar, oregano, rosemary, paprika, salt, and pepper.
- Marinate: Pat lamb chops dry. Coat with marinade in a dish or bag and refrigerate 30–60 minutes.
- Prep veg: Toss mushrooms and tomatoes with 1 tbsp olive oil, a pinch of salt, and oregano.
- Sear: Heat a large oven-safe skillet over medium-high. Sear lamb chops 2–3 minutes per side until browned.
- Roast: Add mushrooms and tomatoes to the skillet around the chops. Transfer to a 200°C (400°F) oven and roast 6–10 minutes, until lamb reaches desired doneness (about 57–60°C/135–140°F for medium).
- Rest & serve: Let lamb rest 5 minutes. Top with feta and parsley, and spoon pan juices over.
