Ingredients:
- 2 ripe plantains (sliced)
- 6 large eggs
- 1/4 cup milk
- 1/2 onion (chopped)
- 1/2 red bell pepper (sliced)
- 1/2 green bell pepper (sliced)
- Salt and pepper to taste
- 1 tablespoon oil or butter (for greasing)
Instructions:
- Preheat your oven to 180°C (350°F).
- In a bowl, whisk together the eggs, milk, salt, and pepper until smooth.
- Grease a baking dish with oil or butter.
- Pour the egg mixture into the dish.
- Arrange the sliced plantains and bell peppers on top in a decorative pattern.
- Bake for 25–30 minutes or until set and golden brown on top.
- Let it cool slightly before slicing and serving. Enjoy warm or at room temperature!
