Ingredients 🛒
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 8 oz mushrooms, sliced
- 4 cups fresh spinach
- 3 green onions, finely chopped
- 2 tbsp butter
- 2 tbsp flour
- 1½ cups milk
- ½ cup grated Parmesan cheese
- Salt & black pepper, to taste
- Fresh parsley, for garnish
Instructions 👩🍳
- Prep oven: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Caramelize mushrooms: Heat olive oil in skillet. Add mushrooms, cook until golden and caramelized. Set aside.
- Sauté spinach: In same pan, wilt spinach briefly. Season lightly. Set aside.
- Green onion sauce: Melt butter in saucepan. Add green onions, sauté 1–2 minutes. Stir in flour, cook briefly. Slowly whisk in milk until smooth. Add Parmesan, salt, and pepper. Simmer until creamy.
- Chicken: Season chicken breasts with salt and pepper. Sear lightly in skillet until golden (not fully cooked).
- Assemble: Place chicken in baking dish. Top with spinach, mushrooms, and pour sauce over. Sprinkle extra Parmesan if desired.
- Bake: Bake uncovered for 25–30 minutes until chicken is cooked through and sauce is bubbly.
- Serve: Garnish with parsley. Enjoy with rice
