Pecan Filling

  • 2 large eggs
  • ½ cup brown sugar, packed
  • ½ cup light corn syrup
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions 👩‍🍳

  1. Preheat oven: 350°F (175°C). Grease muffin tin.
  2. Cut crusts: Roll out pie crust. Cut circles with biscuit cutter or cup. Press into muffin tin.
  3. Make filling: Whisk eggs, brown sugar, corn syrup, butter, vanilla, and salt. Stir in pecans.
  4. Fill cups: Spoon filling into crusts (Âľ full).
  5. Bake: 20–25 minutes until filling is set.
  6. Cool: Let cool in pan 10 minutes. Remove and cool completely.
