Ingredients:

  • 2 cups flour or ground oats
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Chocolate Ganache:

  • 200g dark chocolate, chopped
  • 200ml heavy cream

Instructions:

  1. Preheat oven to 175°C (350°F). Grease and flour two cake pans.
  2. In a large bowl, mix flour, cocoa, sugar, baking powder, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth.
  4. Slowly stir in boiling water (batter will be thin).
  5. Divide batter into pans. Bake for 30–35 minutes or until a toothpick comes out clean.
  6. Cool completely before frosting.
  7. For ganache: Heat cream until hot (not boiling), pour over chocolate, let sit 2 minutes, then stir until smooth. Cool slightly.
  8. Layer cake with ganache between and on top. Decorate with chocolate curls if desired.
