Ingredients:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1/2 cup canned corn (drained)
- 1 can diced tomatoes with green chiles (optional)
- 2 cups cooked pasta (like rotini or egg noodles)
- 1/2 cup shredded cheddar cheese
For the fresh salsa:
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup yellow bell pepper or corn
- Fresh cilantro, chopped
- Lime juice to taste
- Salt and pepper to taste
Directions:
- In a skillet, heat olive oil over medium heat. Add ground beef and chopped onion. Cook until browned and fully cooked.
