Ingredients:
- 1 kg beef stew meat, cut into chunks
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 tbsp tomato paste
- 1 tsp paprika
- Salt and pepper to taste
- 1 tsp thyme (optional)
- 2 cups beef broth or water
Instructions:
- Heat oil in a large pot over medium-high heat. Brown the beef chunks on all sides. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add tomato paste, paprika, salt, pepper, and thyme. Stir well.
- Return beef to the pot. Add carrots, potatoes, and bell peppers.
- Pour in beef broth or water to cover ingredients.
- Cover and simmer on low heat for 1.5 to 2 hours until beef is tender and the sauce thickens.
