Baked Chicken & Vegetable Patties 🍗🌿🥔🍅✨
Juicy chicken patties blended with fresh vegetables, baked until golden, and served with creamy potato mash and tangy tomato sauce.
Ingredients
For the vegetable chicken mix
- 1 onion, roughly chopped
- A handful of fresh parsley
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves of garlic
- 3 chicken fillets (600–700 g / 1.3–1.5 lb), cut into chunks
- Salt & pepper to taste
- 1 egg (for binding)
- ½ cup breadcrumbs
For the creamy potato mash
- 4 medium potatoes, peeled and cubed
- 2 tbsp butter
- ½ cup warm milk
- Salt & pepper to taste
For the tomato sauce
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 can (400 g) crushed tomatoes
- 1 tsp sugar
- Salt, pepper, and oregano to taste
Instructions 👩🍳
- Prepare patties: Blend onion, parsley, peppers, and garlic in a food processor. Add chicken chunks, egg, breadcrumbs, salt, and pepper. Pulse until combined but slightly chunky.
- Shape & bake: Form mixture into patties. Place on a parchment-lined tray. Bake at 375°F (190°C) for 20–25 minutes until golden and cooked through.
- Make mash: Boil potatoes until tender. Drain, mash with butter and warm milk. Season with salt and pepper.
- Cook sauce: Heat olive oil in a pan. Sauté garlic, add crushed tomatoes, sugar, and seasonings. Simmer 10–15 minutes until thickened.
- Serve: Plate patties with creamy mash and spoon tomato sauce over the top.
