🥓 Brown Sugar Bacon-Wrapped Pork Loin 🍖✨

A savory pork loin wrapped in smoky bacon and glazed with caramelized brown sugar—tender, juicy, and irresistible!

Ingredients

  • 1 pork loin (2–3 lbs)
  • 10–12 slices thick-cut bacon
  • ½ cup brown sugar
  • 2 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • Salt, to taste
  • 1 tbsp olive oil

Instructions

  1. Prepare the Pork Loin: Pat dry with paper towels. Make shallow cuts across the surface. Drizzle with olive oil, then season with salt, garlic powder, paprika, and pepper. Rub evenly to coat.
  2. Create the Bacon Wrap: Lay bacon strips overlapping to form a sheet. Place pork loin on top and wrap, tucking ends underneath. Transfer to baking dish seam side down.
  3. Make the Glaze: Mix brown sugar and Dijon mustard into a smooth paste. Brush generously over bacon-wrapped pork.
  4. Bake: Preheat oven to 375°F (190°C). Bake uncovered 55–70 min, spooning pan juices over bacon halfway. Pork is done at 145°F (63°C) internal temp.
  5. Rest & Serve: Let rest 10 min before slicing. Serve with mashed potatoes, roasted vegetables, or salad.
