🥓 Brown Sugar Bacon-Wrapped Pork Loin 🍖✨
A savory pork loin wrapped in smoky bacon and glazed with caramelized brown sugar—tender, juicy, and irresistible!
Ingredients
- 1 pork loin (2–3 lbs)
- 10–12 slices thick-cut bacon
- ½ cup brown sugar
- 2 tbsp Dijon mustard
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp black pepper
- Salt, to taste
- 1 tbsp olive oil
Instructions
- Prepare the Pork Loin: Pat dry with paper towels. Make shallow cuts across the surface. Drizzle with olive oil, then season with salt, garlic powder, paprika, and pepper. Rub evenly to coat.
- Create the Bacon Wrap: Lay bacon strips overlapping to form a sheet. Place pork loin on top and wrap, tucking ends underneath. Transfer to baking dish seam side down.
- Make the Glaze: Mix brown sugar and Dijon mustard into a smooth paste. Brush generously over bacon-wrapped pork.
- Bake: Preheat oven to 375°F (190°C). Bake uncovered 55–70 min, spooning pan juices over bacon halfway. Pork is done at 145°F (63°C) internal temp.
- Rest & Serve: Let rest 10 min before slicing. Serve with mashed potatoes, roasted vegetables, or salad.
