Ingredients
For the Pork Tenderloin
- 1 pork tenderloin (about 1–1.5 lbs)
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
For the Roasted Potatoes
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Cajun seasoning
- Salt and pepper, to taste
- Fresh parsley, for garnish
Directions
- Preheat oven: Set oven to 425°F (220°C).
- Season pork: Rub tenderloin with olive oil and all seasonings. Let rest while prepping potatoes.
- Prep potatoes: Toss halved potatoes with olive oil, garlic powder, Cajun seasoning, salt, and pepper. Spread on baking sheet.
- Sear pork: In a hot skillet, sear pork 2–3 minutes per side until browned. Place on baking sheet with potatoes.
- Roast: Roast 20–25 minutes until pork reaches 145°F (63°C) and potatoes are tender and golden.
- Rest: Let pork rest 5 minutes before slicing. Sprinkle parsley over potatoes.
- Serve: Plate pork slices with roasted potatoes for a bold, hearty meal.
