Mini Cheddar-Topped Meatloaf over Mash 🧀🥔
Individual meatloaf portions baked to perfection, topped with melted cheddar and served on creamy mashed potatoes.
Ingredients
- 500 g ground beef
- 1 small onion, finely chopped
- 1 egg
- 1/2 cup breadcrumbs
- 2 tbsp ketchup
- 1 tsp mustard
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup grated cheddar cheese
- Fresh parsley for garnish
For the mashed potatoes
- 800 g potatoes, peeled and chopped
- 2 tbsp butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Prepare meatloaf mixture: In a bowl, mix ground beef, onion, egg, breadcrumbs, ketchup, mustard, garlic powder, salt, and pepper.
- Shape & bake: Form into small oval portions and place in a greased baking tray. Bake at 375°F (190°C) for 20 minutes.
- Add cheese: Top each meatloaf with grated cheddar and bake for another 5–10 minutes until melted and golden.
- Make mashed potatoes: Boil potatoes until tender. Mash with butter, milk, salt, and pepper until smooth.
- Assemble: Spoon mashed potatoes into serving tray or plates. Place meatloaf portions on top and garnish with parsley.
