Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb), cut into ½-inch pieces
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & freshly ground black pepper, to taste
  • 4 large (10-inch) flour tortillas
  • 1 ½ cups shredded Monterey Jack cheese
  • ¼ cup (½ stick) unsalted butter
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, finely chopped

Instructions

  1. Season Chicken: Pat chicken dry. Toss with olive oil, paprika, salt, and pepper.
  2. Cook Chicken: Heat skillet over medium-high. Cook chicken 5–7 minutes until golden and cooked through. Transfer to plate.
  3. Make Garlic Butter: Wipe skillet clean. Melt butter over low heat. Add garlic and cook 60 seconds until fragrant. Stir in parsley, remove from heat.
  4. Prep Tortillas: Brush one side of each tortilla with garlic-parsley butter.
  5. Assemble Wraps: Place tortilla buttered-side down in skillet. On one half, sprinkle cheese, add chicken, then more cheese. Fold over.
  6. Cook Wraps: Toast 2–3 minutes per side until golden and cheese melts.
  7. Serve: Slice each wrap in half and serve immediately.
