Ingredients
- 2 boneless, skinless chicken breasts (about 1 lb), cut into ½-inch pieces
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt & freshly ground black pepper, to taste
- 4 large (10-inch) flour tortillas
- 1 ½ cups shredded Monterey Jack cheese
- ¼ cup (½ stick) unsalted butter
- 2 garlic cloves, minced
- 2 tbsp fresh parsley, finely chopped
Instructions
- Season Chicken: Pat chicken dry. Toss with olive oil, paprika, salt, and pepper.
- Cook Chicken: Heat skillet over medium-high. Cook chicken 5–7 minutes until golden and cooked through. Transfer to plate.
- Make Garlic Butter: Wipe skillet clean. Melt butter over low heat. Add garlic and cook 60 seconds until fragrant. Stir in parsley, remove from heat.
- Prep Tortillas: Brush one side of each tortilla with garlic-parsley butter.
- Assemble Wraps: Place tortilla buttered-side down in skillet. On one half, sprinkle cheese, add chicken, then more cheese. Fold over.
- Cook Wraps: Toast 2–3 minutes per side until golden and cheese melts.
- Serve: Slice each wrap in half and serve immediately.
