Chicken Bacon Ranch Potato Bake 🌺😍

A hearty, cheesy, and comforting dish loaded with potatoes, chicken, bacon, and ranch flavor!

Ingredients

  • 1.5 lbs baby gold potatoes (about 2 pounds)
  • 2 lbs chicken breast, cut into bite-sized pieces
  • 1 cup ranch dressing
  • 2 cups shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prep the Potatoes: Preheat oven to 400Β°F (200Β°C). Wash and dice potatoes into bite-sized chunks. Toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread evenly in a greased 9×13-inch baking dish.
  2. Bake the Potatoes: Bake for 25–30 minutes, stirring halfway, until golden and tender.
  3. Add Chicken & Ranch: Remove dish from oven. Add chicken pieces and drizzle ranch dressing over the top. Stir to coat evenly.
  4. Top with Cheese & Bacon: Sprinkle shredded cheddar cheese and crumbled bacon over the chicken and potatoes.
  5. Final Bake: Return to oven for 20–25 minutes, until chicken is cooked through and cheese is melted and bubbly.
  6. Garnish & Serve: Top with chopped green onions. Serve hot and enjoy!
