Chicken Bacon Ranch Potato Bake πΊπ
A hearty, cheesy, and comforting dish loaded with potatoes, chicken, bacon, and ranch flavor!
Ingredients
- 1.5 lbs baby gold potatoes (about 2 pounds)
- 2 lbs chicken breast, cut into bite-sized pieces
- 1 cup ranch dressing
- 2 cups shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and black pepper, to taste
- 2 green onions, chopped (for garnish)
Instructions
- Prep the Potatoes: Preheat oven to 400Β°F (200Β°C). Wash and dice potatoes into bite-sized chunks. Toss with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread evenly in a greased 9×13-inch baking dish.
- Bake the Potatoes: Bake for 25β30 minutes, stirring halfway, until golden and tender.
- Add Chicken & Ranch: Remove dish from oven. Add chicken pieces and drizzle ranch dressing over the top. Stir to coat evenly.
- Top with Cheese & Bacon: Sprinkle shredded cheddar cheese and crumbled bacon over the chicken and potatoes.
- Final Bake: Return to oven for 20β25 minutes, until chicken is cooked through and cheese is melted and bubbly.
- Garnish & Serve: Top with chopped green onions. Serve hot and enjoy!
