Chocolate Strawberry Cheesecake 🍫 🍓
A decadent cheesecake with a chocolate crust, creamy cocoa filling, and fresh strawberry topping.
Ingredients
For the Crust
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter (melted)
For the Cheesecake Filling
- 16 oz cream cheese (softened)
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
For the Strawberry Topping
- 1 lb fresh strawberries (sliced)
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
For Garnish
- Melted chocolate (for drizzling)
- Whipped cream (optional)
Instructions
For the Crust
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Mix chocolate cookie crumbs and melted butter until combined.
- Press mixture firmly into the bottom of the pan. Bake for 8–10 minutes, then let cool.
For the Cheesecake Filling
- Beat cream cheese and sugar until smooth and creamy.
- Add cocoa powder, eggs, sour cream, and vanilla extract. Mix until fully combined.
- Pour filling over crust and smooth the top.
- Bake for 45–50 minutes, until center is set but slightly jiggly.
- Turn off oven and let cheesecake cool inside with door slightly open for 30 minutes.
- Cool to room temperature, then refrigerate at least 4 hours or overnight.
For the Strawberry Topping
- Combine strawberries, sugar, and lemon juice in a saucepan.
- Cook over medium heat for 8–10 minutes, stirring occasionally, until thickened.
- Let topping cool completely.
Assembly
- Spread cooled strawberry topping over chilled cheesecake.
- Drizzle melted chocolate on top.
- Garnish with whipped cream and extra strawberries if desired.
