Soft, cinnamon-sugar cookies with a creamy cheesecake filling—a festive twist on classic snickerdoodles!

Ingredients

For the cookies

  • 2 ¾ cups all-purpose flour
  • 1 ½ teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the cheesecake filling

  • 4 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract

For the cinnamon-sugar coating

  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon

Directions

  1. Make the filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Chill 15–20 minutes.
  2. Prepare dough: Whisk flour, cream of tartar, baking soda, and salt. Cream butter and sugar until fluffy. Add eggs and vanilla. Gradually mix in dry ingredients until soft dough forms. Chill 30 minutes.
  3. Assemble: Preheat oven to 350°F (175°C). Line baking sheet with parchment. Mix cinnamon and sugar for coating. Scoop 1 tbsp dough, flatten, add cheesecake filling, cover with another piece of dough, and seal. Roll in cinnamon-sugar.
  4. Bake: Place dough balls 2 inches apart. Bake 10–12 minutes until edges are set and lightly golden. Cool on sheet briefly, then transfer to wire rack.
