Ingredients
For the Sugar Cookie Layer
- 1 cup (226 g) unsalted butter, softened
- 1¼ cups (250 g) granulated sugar
- 1 large egg
- 1 tbsp pure vanilla extract
- 3 cups (375 g) all-purpose flour
- ½ tsp baking powder
- ½ tsp fine sea salt
For the Cheesecake Layer
- 16 oz (452 g) full-fat cream cheese, softened
- ½ cup (100 g) granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
For Topping
- 2 tbsp coarse or sanding sugar
Instructions
- Prepare Oven & Pan: Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment and lightly grease.
- Make Cookie Dough: Cream butter and sugar until fluffy (3 min). Beat in egg and vanilla. Whisk flour, baking powder, and salt separately, then add gradually to butter mixture until dough forms.
- Form Crust: Press two-thirds of dough evenly into pan. Reserve remaining dough.
- Prepare Cheesecake Filling: Beat cream cheese and sugar until smooth (2 min). Add egg and vanilla; mix until combined.
- Assemble: Spread cheesecake filling over crust. Crumble reserved dough on top. Sprinkle coarse sugar.
- Bake: Bake 35–40 min until cheesecake is set (slight jiggle) and topping is golden.
- Cool & Chill: Cool completely, then refrigerate 4 hrs or overnight.
- Serve: Lift slab with parchment, slice into squares with clean knife for neat edges.
