Ingredients

  • 1 packet (2 ¼ tsp) instant yeast
  • 1 tbsp honey
  • 1 cup buttermilk, room temperature
  • 1 large egg, lightly beaten
  • 2 tbsp unsalted butter, melted
  • 1 tsp pure vanilla extract
  • 4 cups all-purpose flour, plus extra for dusting
  • ½ tsp ground cinnamon
  • ½ tsp kosher salt

  • Canola or vegetable oil, for deep frying
  • Powdered sugar, for dusting
  • Hot chocolate or coffee, for serving (optional)

Instructions

Part 1: Make and Proof the Dough

  1. Combine warm water, yeast, and honey in mixer bowl. Let sit 5 minutes until foamy.
  2. Add buttermilk, egg, melted butter, and vanilla. Mix on low speed.
  3. Add flour, cinnamon, and salt. Mix until shaggy dough forms, then knead 2–3 minutes until smooth and elastic.
  4. Shape dough into a ball, cover, and let rise 1–2 hours until doubled.

Part 2: Shape the Beignets

  1. Punch down dough and turn onto floured surface.
  2. Roll into ¼-inch thick rectangle. Cut into 3-inch squares (about 25 pieces).
  3. Cover squares with damp towel while heating oil.

Part 3: Fry to Golden Perfection

  1. Heat oil in pot to 350°F (175°C).
  2. Fry 4–6 squares at a time, 60–90 seconds per side, until puffed and golden.
  3. Drain on wire rack or paper towels.

Part 4: Serve Warm

  1. Toss warm beignets in powdered sugar.
  2. Serve immediately with hot chocolate or coffee.
