Ingredients

For the Sponge Cake

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

For the Chocolate Coating

  • 3 cups powdered sugar
  • 1/3 cup cocoa powder
  • 1/2 cup milk
  • 2 tablespoons melted butter

For Finishing

  • 2–3 cups desiccated coconut

Instructions

Make the Sponge Cake

  1. Preheat oven to 350°F (175°C). Grease a square baking pan.
  2. Whisk flour, baking powder, and salt in a medium bowl.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  4. Gradually add dry ingredients, alternating with milk, mixing until smooth.
  5. Pour batter into pan and bake 20–25 minutes, until a toothpick comes out clean. Cool completely before cutting into squares.

Prepare the Chocolate Coating

  1. Sift powdered sugar and cocoa powder into a bowl.
  2. Add milk and melted butter. Whisk until smooth and glossy.

Coat the Cakes

  1. Cut cooled sponge cake into squares.
  2. Dip each square into chocolate coating until fully covered.
  3. Roll coated squares in desiccated coconut until evenly coated.
  4. Place lamingtons on a wire rack to set. Enjoy!
