Soft sponge cake squares dipped in chocolate coating and rolled in coconut—a true Aussie classic!
Ingredients
For the Sponge Cake
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
For the Chocolate Coating
- 3 cups powdered sugar
- 1/3 cup cocoa powder
- 1/2 cup milk
- 2 tablespoons melted butter
For Finishing
- 2–3 cups desiccated coconut
Instructions
Make the Sponge Cake
- Preheat oven to 350°F (175°C). Grease a square baking pan.
- Whisk flour, baking powder, and salt in a medium bowl.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla.
- Gradually add dry ingredients, alternating with milk, mixing until smooth.
- Pour batter into pan and bake 20–25 minutes, until a toothpick comes out clean. Cool completely before cutting into squares.
Prepare the Chocolate Coating
- Sift powdered sugar and cocoa powder into a bowl.
- Add milk and melted butter. Whisk until smooth and glossy.
Coat the Cakes
- Cut cooled sponge cake into squares.
- Dip each square into chocolate coating until fully covered.
- Roll coated squares in desiccated coconut until evenly coated.
- Place lamingtons on a wire rack to set. Enjoy!
