β¨ Introduction
Sapin Sapin is a traditional Filipino layered rice cake made with glutinous rice flour, coconut milk, and vibrant flavors. Each colorful layer represents a different taste, topped with latik for extra richness.
π§ Ingredients
- 1/2 kg glutinous rice flour
- 2 cans coconut milk
- 1 can condensed milk
- 1/2 cup sugar
- 1 cup water
- 1 tsp vanilla extract
- Flavor extracts (ube, langka) or food coloring
- Latik (toasted coconut topping)

- Prepare the batter: In a large bowl, combine glutinous rice flour, coconut milk, condensed milk, and vanilla extract. Mix until smooth. Sift to remove lumps. Divide into three equal portions.
- Color & flavor: Add violet coloring to one portion (ube), yellow coloring to another (langka), and leave the third plain (white).
- Steam layers:
- Pour purple batter into a greased pan. Steam for 8 minutes until set.
- Add yellow batter on top. Steam another 8 minutes.
- Finish with the white batter. Steam 8 minutes more until firm.
- Cool & garnish: Let cool completely before removing from pan. Sprinkle latik on top.
- Serve: Slice into portions and enjoy this colorful Filipino delicacy.
